You decide to give the customer the fillets.

Your boss hears about this and he's not happy. He wants to know why you didn't just cut some chops for this customer.

You explain the customer was in a hurry and that her order had been misplaced. Your boss isn't pleased about the mistake, but he's glad you smoothed things over with your customer.

This is one possible real-life decision that may have to be made by a meat cutter, but decision making goes beyond just having to deal with difficult customers.

Ron Smith, professor of meat studies, says there are other types of situations which may require good decision-making skills. "You need to know what goes and what doesn't as far as marketing and display."
