The next week the price starts to rise. By the end of the week, the price has risen sharply as the potato season ends and supplies start to run low.

You continue to buy weekly and absorb the price increases. By the end of the month, you're scratching around locally trying to find enough potatoes to supply your customers. Most of the other suppliers are in the same boat, but you kick yourself for missing a great opportunity. You win some, you lose some.
