It's the end of a busy night of mixing drinks. Now that the bar patrons are gone, you need to cash out.

The ring-out (how much was sold) comes to $3,890. This is your gross sale. From that you deduct the manager's tab of $137. This is for drinks he bought for regular patrons. You also deduct the DJ's tab of $94, and staff meals, which total $18. This gives you your net sales.

The tips add up to $480. From these, you pay a house tip of 4 percent of net sales to the business. It's divided among such staff as bussers, hostesses and doormen. What's left of the tips is divided between you and 1 other bartender.
