According to Amanda Talmage, knowing when to cut someone off is one of the biggest decisions a bartender has to make.

"Decision making is about knowing when to cut somebody off, when to serve somebody. And it's about being able to see the signs. If somebody walks into your bar intoxicated, you have to make a snap decision. You can't go straight to your boss and say, 'I'm not going to serve this customer because I don't want to be responsible for what happens.'"
