Real-Life Math

You are a video game developer designing a young person's game about a giant, talking, skateboard-riding octopus. The goal of the game is to get the octopus to the middle of Wiggle Castle (a castle made entirely of an edible, jelly-like substance). The game is for kids, so it needs to be kept relatively simple.

The castle has 12 rooms and one final room. Throughout the course of the game, you want the player to encounter various end-of-level bosses to battle. You have designed seven end-of-level bosses, each one a different degree of difficulty to beat. Where do you put each boss and how do the difficulty levels come into play?
