Like lots of jobs, chefs have their own lingo. Back in the kitchen, phrases are used that you might not hear anywhere else. For example, "86" means the kitchen is out of that item. If you're "weeded," it means orders are coming in faster than you can pull them out. "Veal" can refer to the food as well as new employees. "Best part of the chicken" is anything but -- it's the almost-inedible part of an animal that isn't fit for customers... so servers often get to eat it for their meals.

Hey, no one said the kitchen was a pretty place.

You overhear a chef say this: "We're weeded for lunch, and 86 the steak. Best part of the chicken of the steak is all that's left for the veal." What exactly is he talking about?

"If you can't communicate effectively, you'll be run out of the kitchen," says chef Christabel Padmore.
