You assign tasks to your staff to fix the various problems.

Right away, you tell one server to turn the fire alarm off and announce to the restaurant's customers that it was a false alarm and there is no reason to worry. While that's happening, you tell a cook to grab a coat hanger and a plunger and get to work on the dishwasher, but not before he unplugs the dishwasher and mops the floor so it is safe for the servers. Once things have settled down you call the owner so he knows that everything is going smoothly.

"It is totally important that a chef be a good decision maker and problem solver," says David Pantone. He's dean of culinary education at a culinary institute in West Palm Beach, Florida. "You can learn a lot from books and school, but you also need to work at a bunch of different places, learn from many different people and experience many different situations. Then when there is a decision to be made you have a lot of experience to draw upon."
