To the education board:

Sensory evaluation is such an exciting field. There are many facets to the field, as I am sure you are aware. For that reason, I am very excited about the new program you are implementing.

I think it is a wonderful idea to offer continuing education courses to professionals in our field, and I would like to offer you my services to teach one of those classes on rotating schedule.

I have attached a detailed course outline for you to review. The course will educate food scientists on the following:

  • The types of chocolate
  • How and why chocolates differ
  • The difference between carob and chocolate

I feel that if food scientists knew the subtle nuances of chocolate, it could lead them to a better understanding of all aspects of sensory evaluation.

I have also enclosed samples of the types of exercises and laboratory work we will be doing for each section of the course. Of course, the course will be educational as well as fun.
