As a self-employed marine botanist, you have been producing and marketing kelp products for sale in health food stores and in specialty grocery shops. Kelp is a popular food item in Asia; North Americans are beginning to develop a taste for the product as well.

Some health food stores have asked you to write them a paragraph outlining the benefits of eating kelp. Here are the facts you need to include:

As a nutrient, kelp:

  • is also known as algae
  • is low in calories, low in fat and high in fiber
  • contains over 60 minerals and elements including iron, sodium, phosphorus, calcium, magnesium and potassium
  • contains 21 amino acids and both simple and complex carbohydrates
  • is high in iodine, a mineral that is necessary for proper glandular function and metabolism
  • contains vitamins B, B1, B2, C, D and E
  • is often used as a salt substitute
  • may help reduce hypertension and prevent strokes and tumors, but the research is inconclusive
